A short-term challenge for the month of December courtesy of Earth Balance! I am pretty excited to have some motivation to do some vegan baking this month. Some of the recipes are out of order from the website’s sequence, but I’ll make sure we cover everything.
These might not be your mama’s snowball cookies, but as a first-time baker of such a treat, I deem them a success (and so does C.C., who affectionately calls them “crack”).
While I expected snowball cookies to equate to fluffy, squishy spheres of sweetness, I am pleased by the somewhat more crumbly and firm nature of the powder-coated chocolate balls. Not-too-sweet and not-too-heavy, I would make these again and delight in their chocolate-chip textured centres.
In the opposite direction of the last chocolate spheres, these goodies were gooier (I guess that’s a word) than I imagined. However, this did not stop me from consuming an inordinate amount of them over a short time period, and eagerly sharing them wherever I could so as to distribute them more evenly among stomachs.
These have been called “haystacks” by a few, and required very little effort to make. Peanut butter and oats were the main ingredients, with a few other important components (such as chocolate) to put a bow on the whole thing. Would make again.
